Ingredients

  • 24 white fish fillets (6 oz each)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper
  • 12 tbsp olive oil or avocado oil
  • 2 cloves garlic, finely minced
  • 12 fresh red chilies, finely diced
  • 1/2 tsp dried chili flakes
  • 1/4 cup fresh flat-leaf parsley, finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp unsalted butter

Instructions

  1. Prepare the fish: Pat the fish fillets dry with paper towels. Season generously with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Sear to perfection: Heat oil in a skillet over medium-high heat. Add seasoned fillets and sear for 3-4 minutes. Flip and cook for an additional 2-3 minutes.
  3. Create the chili-herb infusion: Add butter, garlic, chilies, and chili flakes to the skillet. Sauté until fragrant. Stir in parsley and lemon juice off the heat.
  4. Assemble and serve: Transfer fish to a serving plate and ladle chili-herb oil over the fillets. Serve with lemon wedges.

Notes

Ensure fish fillets are dry for optimal searing. Adjust spice levels to taste.
