Instructions
- Preheat the oven to 400°F (200°C).
- Toss cherry tomatoes with olive oil, garlic, salt, and pepper on a baking sheet.
- Roast in the oven for about 20 minutes, until soft and slightly charred.
- Cook pasta according to package instructions and reserve a ladle of pasta water before draining.
- Drain pasta and return to the pot, adding a splash of reserved pasta water.
- Add roasted tomatoes and garlic along with ricotta cheese, stirring until combined.
- Season with salt and pepper to taste.
- Garnish with fresh basil and serve immediately.
