  • 1/2 cup Kalamata olives, pitted
  • 1/2 small red onion, thinly sliced
  • Lemon wedges for serving
  • 1/2 cup crumbled feta cheese
  • 1/2 cup fresh Italian parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1 tbsp olive oil (to bind)
  • 3 tbsp olive oil (for garnish)
  • 1 tbsp fresh parsley, minced
  • A squeeze of lemon juice
  • A pinch of red pepper flakes (optional)

Instructions

  1. Marinate the chicken: In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Toss in the chicken cutlets and let them sit for about 15 minutes.
  2. Cook the chicken: Heat a skillet or grill pan over medium-high heat and cook the chicken for roughly 5–6 minutes per side until browned and cooked through. Let the chicken rest for 5 minutes before slicing.
  3. Prep the mix-ins: Prepare your quinoa according to package instructions and combine parsley, dill, and feta in a bowl with a splash of olive oil.
  4. Assemble the bowl: Begin with a base of quinoa, arrange chicken slices, and then add toppings like cucumber, tomatoes, red onions, olives, and the herb-feta mixture. Drizzle with herb oil and serve with lemon wedges.
