- 16 oz (454 g) mini farfalle pasta
- 2–3 boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder (divided)
- 1 teaspoon Italian seasoning (divided)
- ½ teaspoon onion powder
- 3 tablespoons olive oil (divided)
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 3 cloves garlic, minced
- 4 tablespoons butter (57 g)
- ¼ cup fresh lemon juice (60 g)
- 1 cup freshly grated Parmesan cheese (95 g)
- ¼ cup fresh parsley, chopped (15 g)
Instructions
- Bring a large pot of salted water to a boil. Add the mini farfalle pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and set aside.
- Pat dry the chicken breasts with paper towels; season with salt, pepper, lemon zest, ½ teaspoon garlic powder, ½ teaspoon Italian seasoning, and onion powder.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken, cooking for about 3-5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Transfer the chicken to a plate and cover loosely with foil.
- Pour in the remaining tablespoon of olive oil into the same skillet. Add chopped zucchini and yellow squash, seasoning with salt, pepper, the remaining garlic powder, and Italian seasoning. Sauté for around 2 minutes, then add minced garlic, sautéing for 30 seconds until fragrant.
- Gently add the cooked pasta back into the skillet, then toss in the butter and fresh lemon juice. Mix until the butter melts.
- Stir in the freshly grated Parmesan cheese and toss until well combined.
- Slice the warm chicken into strips and return it to the pan. Toss gently to combine.
- Garnish with freshly chopped parsley and additional Parmesan cheese if desired before serving.
Notes
This dish can be meal-prepped by storing the chicken and pasta separately. Consider customizing with seasonal veggies or adding sun-dried tomatoes for sweetness.
