Ingredients
Scale
- 1 cup (100 g) finely grated carrots
- 1 cup (225 g) cottage cheese
- 3 large eggs
- 1 1/2 cups (135 g) oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup (25 g) shredded Parmesan cheese (optional)
- 1 tablespoon chia seeds (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a small loaf pan with parchment paper.
- Grate the carrots finely. If they are especially watery, gently squeeze out the excess moisture.
- Blend the cottage cheese and eggs until mostly smooth.
- Transfer the mixture to a bowl and stir in the oat flour, baking powder, garlic powder, salt and black pepper.
- Fold in the grated carrots, optional Parmesan and chia seeds.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40 to 50 minutes, until the center is fully set and a toothpick inserted into the middle comes out without wet batter.
- Let the bread cool in the pan for 10 to 15 minutes, then transfer it to a wire rack.
- Allow it to cool completely before slicing for a firmer texture.
