Delicious cookie bars capturing the essence of campfire s’mores with a gluten-free twist.


Ingredients

  • 1 cup gluten free graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup marshmallow fluff
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the gluten-free graham cracker crumbs, melted butter, brown sugar, granulated sugar, vanilla extract, egg, baking powder, and salt in a mixing bowl.
  3. Press half of the cookie dough into the bottom of the prepared baking pan.
  4. Spread the marshmallow fluff evenly over the cookie base.
  5. Sprinkle chocolate chips generously over the marshmallow fluff.
  6. Take the remaining cookie dough and distribute it over the chocolate chips.
  7. Bake in the preheated oven for 25-30 minutes.
  8. Allow the bars to cool completely before cutting into squares.

Notes

For a sweeter contrast, consider adding a sprinkle of sea salt before baking.
