Delicious cookie bars capturing the essence of campfire s’mores with a gluten-free twist.
Ingredients

- 1 cup gluten free graham cracker crumbs
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup marshmallow fluff
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine the gluten-free graham cracker crumbs, melted butter, brown sugar, granulated sugar, vanilla extract, egg, baking powder, and salt in a mixing bowl.
- Press half of the cookie dough into the bottom of the prepared baking pan.
- Spread the marshmallow fluff evenly over the cookie base.
- Sprinkle chocolate chips generously over the marshmallow fluff.
- Take the remaining cookie dough and distribute it over the chocolate chips.
- Bake in the preheated oven for 25-30 minutes.
- Allow the bars to cool completely before cutting into squares.
Notes
For a sweeter contrast, consider adding a sprinkle of sea salt before baking.
