  • ¼ cup fresh lemon juice
  • Zest of 2 fresh lemons

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking pan by lining it with parchment paper.
  2. Combine the dry ingredients: In a medium bowl, whisk together the gluten-free flour, baking powder, and salt.
  3. Mix the wet ingredients: In another large bowl, whisk together the eggs, coconut sugar, and maple syrup until well combined. Add in the melted coconut oil, lemon juice, and zest, mixing until smooth.
  4. Combine the mixtures: Slowly incorporate the dry mixture into the wet ingredients, folding gently with a spatula until just combined.
  5. Pour the batter into the prepared pan, spreading it evenly.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for about 10 minutes before drizzling with lemon glaze (powdered sugar and lemon juice) on top before serving.
