- ¾ cup coconut sugar
- ¼ cup maple syrup
- ½ cup melted coconut oil
- ¼ cup fresh lemon juice
- Zest of 2 fresh lemons
Instructions
- Preheat the oven to 350°F (175°C) and prepare your baking pan by lining it with parchment paper.
- Combine the dry ingredients: In a medium bowl, whisk together the gluten-free flour, baking powder, and salt.
- Mix the wet ingredients: In another large bowl, whisk together the eggs, coconut sugar, and maple syrup until well combined. Add in the melted coconut oil, lemon juice, and zest, mixing until smooth.
- Combine the mixtures: Slowly incorporate the dry mixture into the wet ingredients, folding gently with a spatula until just combined.
- Pour the batter into the prepared pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool for about 10 minutes before drizzling with lemon glaze (powdered sugar and lemon juice) on top before serving.
