Instructions
- Prepare the Gnocchi: Cook the gnocchi according to the package instructions. Typically, they’ll float to the surface when ready. Once they do, drain and set aside, ensuring they don’t stick together.
- Sauté the Garlic: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Wilt the Spinach: Toss the fresh spinach into the skillet, stirring occasionally until the leaves wilt, approximately 2-3 minutes.
- Make the Cream Sauce: Pour the heavy cream into the skillet, bringing it to a gentle simmer. Stir in the crumbled feta and mix until smooth.
- Combine with Gnocchi: Gently add the cooked gnocchi into your creamy sauce, tossing to coat every piece generously.
- Season: Taste and season with salt and pepper as needed.
- Serve: Serve warm topped with freshly grated Parmesan cheese if desired.
