Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced chicken, seasoning generously with salt and pepper, until golden brown, about 5-7 minutes.
  3. Add in the diced red bell pepper, black beans, and sweet corn. Cook for an additional 2 minutes.
