- 1 can black beans, rinsed and drained
- 1 cup sweet corn
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the diced chicken, seasoning generously with salt and pepper, until golden brown, about 5-7 minutes.
- Add in the diced red bell pepper, black beans, and sweet corn. Cook for an additional 2 minutes.
- Combine the rice and chicken broth, stirring everything together. Bring to a gentle boil.
- Reduce the heat to low and cover the skillet. Let it simmer for about 15 minutes, or until the rice is fluffy and fully cooked.
- Finish by stirring in the chopped cilantro and lime juice.
