Delightful apple pie biscuit sandwiches combining flaky biscuits with tender, cinnamon-spiced apples.
Ingredients

- 2 cups of biscuit mix
- 1/2 cup of milk
- 2 cups of diced apples
- 1/2 cup of brown sugar
- 1 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 2 tablespoons of butter
- Whipped cream or ice cream (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Mix the biscuit mix and milk in a mixing bowl until a soft dough forms.
- Roll out the dough to about 1/2 inch thick and cut into circles.
- Prepare the apple filling by cooking diced apples, brown sugar, cinnamon, and nutmeg in a saucepan over medium heat for 5-7 minutes.
- Assemble the sandwiches by layering half the biscuit rounds, spooning the apple mixture on top, and capping with remaining rounds.
- Dot with small pieces of butter on the top layer.
- Bake for 15-20 minutes until golden brown.
- Serve warm with whipped cream or ice cream.
Notes
Make ahead by preparing the apple filling in advance. Store leftovers in an airtight container for up to three days.
