- 1 thick-cut Ribeye steak (approx. 12–14 oz)
- 1 tbsp olive oil
- Coarse kosher salt and freshly cracked black pepper
- 2 tbsp butter (for basting)
- 2 cloves crushed garlic (for basting)
- 1 sprig of rosemary (for basting, optional)
- 1/2 lb large shrimp, peeled and deveined (tails left on)
- 3 tbsp butter (for shrimp)
- 4 cloves garlic, minced
- 1/4 cup fresh Italian parsley, finely chopped
- 1/2 lemon, juiced
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
- 2 large Russet potatoes (or a bag of high-quality frozen thin-cut fries)
- 2 tbsp vegetable oil (if baking/air frying) or oil for deep frying
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt to taste
Instructions
- Prepare the fries by cutting the potatoes into thin matchsticks and soaking them in cold water for 30 minutes.
- Pat the fries completely dry before frying or baking.
- Heat oil to 325°F (160°C) for deep frying; fry for 4-5 minutes, then increase oil temperature to 375°F (190°C) and fry for another 2-3 minutes until golden brown.
- Alternatively, toss fries with vegetable oil and seasonings; air fry at 400°F (200°C) for 15-20 minutes, shaking halfway through.
- Bring the ribeye to room temperature and season with salt and pepper.
- Preheat your grill or cast iron grill pan to high heat.
- Sear the steak for 2-3 minutes without disturbing it, then rotate 45 degrees and cook for an additional 2 minutes; flip and cook until reaching an internal temperature of 130°F (54°C).
- Rest the steak for 5-10 minutes before plating.
- Melt butter in a skillet over medium heat, then add minced garlic and red pepper flakes, sautéing for about a minute.
- Add the shrimp in a single layer, sauté for 2 minutes, flip, then add parsley and lemon juice; cook until shrimp are opaque and pink, about 1-2 minutes more.
Notes
Optionally, replace shrimp with scallops or use flank steak for a different twist. Make sure to dry your fries thoroughly to ensure crispiness.
