- 4 ounces shredded pepper jack cheese
- 2 tablespoons full-fat cream cheese
- 1/2 cup mayonnaise
- 1/2 cup pimentos, drained and diced
- 1 small shallot, minced
- Pinch of paprika
- 8 slices of white bread
Instructions
- Combine the shredded cheddar and pepper jack cheeses, cream cheese, and mayonnaise in a mixing bowl.
- Fold in the chopped pimentos, minced shallot, and paprika until evenly distributed.
- Spread the pimento cheese mixture onto four slices of bread.
- Top each spread slice with the remaining four slices of bread, pressing down gently.
- Serve immediately or wrap tightly for later; optionally toast on a skillet.
