  • 8 slices of white bread

Instructions

  1. Combine the shredded cheddar and pepper jack cheeses, cream cheese, and mayonnaise in a mixing bowl.
  2. Fold in the chopped pimentos, minced shallot, and paprika until evenly distributed.
  3. Spread the pimento cheese mixture onto four slices of bread.
  4. Top each spread slice with the remaining four slices of bread, pressing down gently.
  5. Serve immediately or wrap tightly for later; optionally toast on a skillet.
