- 4 boneless, skinless chicken breasts or thighs
- ¼ cup creamy peanut butter
- ¼ cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- ½ cup coconut milk (or regular milk)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons vegetable oil
- Sriracha, to taste (optional)
- Chopped peanuts and cilantro for garnish
Instructions
- Prepare your ingredients: Mince the garlic and ginger finely.
- Heat the vegetable oil in a heavy skillet over medium-high heat. Add the chicken and sear for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
- Lower the heat to medium. Add minced garlic and ginger, sautéing for about 1-2 minutes.
- Stir in the peanut butter, soy sauce, rice vinegar, honey, Sriracha, and coconut milk until smooth.
- Return the chicken to the skillet, coating it generously in the sauce. Let it simmer for around 5 minutes.
- Serve hot over steamed rice or noodles, garnished with peanuts and cilantro.
Notes
For best flavor, consider marinating the chicken in the sauce overnight before cooking.
