Description

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • ½ cup coconut milk (or regular milk)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons vegetable oil
  • Sriracha, to taste (optional)
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Prepare your ingredients: Mince the garlic and ginger finely.
  2. Heat the vegetable oil in a heavy skillet over medium-high heat. Add the chicken and sear for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
  3. Lower the heat to medium. Add minced garlic and ginger, sautéing for about 1-2 minutes.
  4. Stir in the peanut butter, soy sauce, rice vinegar, honey, Sriracha, and coconut milk until smooth.
  5. Return the chicken to the skillet, coating it generously in the sauce. Let it simmer for around 5 minutes.
  6. Serve hot over steamed rice or noodles, garnished with peanuts and cilantro.

Notes

For best flavor, consider marinating the chicken in the sauce overnight before cooking.
