Ingredients

  • 10-ounce jar maraschino cherries (divided)
  • 1 3/4 cup + 2 tablespoons all-purpose flour (divided)
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt (optional)
  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/4 cup reserved cherry juice
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9 x 5-inch loaf pan by lining it with parchment paper for easy removal.
  2. Combine in a medium bowl 1 3/4 cup flour, granulated sugar, baking powder, and a pinch of salt. Whisk until well mixed.
  3. Whisk together your eggs, canola oil, and reserved cherry juice in a larger bowl. Add in the almond and vanilla extracts, stirring until everything blends seamlessly.
  4. Gradually incorporate the dry mixture into the wet ingredients. Mix gently and stop as soon as just combined to keep the bread light and airy.
  5. Chop half of the cherries and fold them into the batter, letting their flavor disperse throughout.
  6. Pour the batter into your prepared loaf pan, spreading it evenly. Gently press the remaining cherries on top, inviting their juices to infuse as it bakes.
  7. Place in the preheated oven and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow it to cool in the pan for about 10 minutes. Then, carefully transfer to a wire rack to cool completely.
  9. Mix the confectioners’ sugar, cherry juice, and extra almond extract until smooth for the glaze.
  10. Drizzle the glossy glaze over the cooled bread.
