- 10-ounce jar maraschino cherries (divided)
- 1 3/4 cup + 2 tablespoons all-purpose flour (divided)
- 1 cup granulated sugar
- 2 teaspoons baking powder
- Pinch of salt (optional)
- 2 large eggs
- 1/2 cup canola or vegetable oil
- 1/4 cup reserved cherry juice
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 1/2 cups confectioners’ sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9 x 5-inch loaf pan by lining it with parchment paper for easy removal.
- Combine in a medium bowl 1 3/4 cup flour, granulated sugar, baking powder, and a pinch of salt. Whisk until well mixed.
- Whisk together your eggs, canola oil, and reserved cherry juice in a larger bowl. Add in the almond and vanilla extracts, stirring until everything blends seamlessly.
- Gradually incorporate the dry mixture into the wet ingredients. Mix gently and stop as soon as just combined to keep the bread light and airy.
- Chop half of the cherries and fold them into the batter, letting their flavor disperse throughout.
- Pour the batter into your prepared loaf pan, spreading it evenly. Gently press the remaining cherries on top, inviting their juices to infuse as it bakes.
- Place in the preheated oven and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow it to cool in the pan for about 10 minutes. Then, carefully transfer to a wire rack to cool completely.
- Mix the confectioners’ sugar, cherry juice, and extra almond extract until smooth for the glaze.
- Drizzle the glossy glaze over the cooled bread.
