  • Author: Sophie

Description

Love pickles with a little sweetness, plenty of garlic, and a spicy kick? These homemade Sweet & Spicy Garlic Pepper Pickles are crunchy, tangy, and bursting with flavor! Perfect for burgers, sandwiches, BBQ plates, or snacking straight from the jar.

Ingredients

Scale
  • 4 cups cucumber slices
  • 1 cup white vinegar (5% acidity)
  • 1 cup water
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon pickling salt
  • 5 garlic cloves, sliced
  • 1–2 jalapeño peppers, sliced
  • 1 teaspoon black peppercorns
  • ½ teaspoon red pepper flakes
  • ½ teaspoon mustard seeds
  • ¼ teaspoon celery seeds (optional)

Instructions

  1. Prepare the cucumbers: Wash the cucumbers and slice them into rounds or spears. Pack them into a clean heat-safe glass jar with the garlic and jalapeño slices.
  2. Make the brine: In a saucepan, combine vinegar, water, honey, brown sugar, pickling salt, peppercorns, red pepper flakes, mustard seeds, and celery seeds.
  3. Heat: Bring the mixture to a gentle simmer, stirring until the salt and sugar dissolve. Remove from heat.
  4. Fill the jar: Carefully pour the warm brine over the cucumbers until completely covered.
  5. Cool: Let the jar cool, then close it and refrigerate.
  6. Let the flavors develop: Wait at least 24 hours before tasting. For a stronger garlic-pepper flavor, give them 2–3 days in the refrigerator.
