Ingredients

- 2 ripe peaches, sliced
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled (optional)
- 1/2 cup nuts (walnuts, pecans, or almonds), chopped (optional)
Instructions
- Slice the peaches into thin wedges and set aside.
- Combine the mixed greens in a large mixing bowl.
- Add the peach slices atop the greens.
- Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
- Dress the salad with the dressing, tossing gently to coat.
- Sprinkle with feta cheese and nuts if using.
Notes
Best enjoyed fresh, but can be stored in the fridge for up to 2 days. Serve immediately for optimal crunch.
