Description

A refreshing Summer Peach Salad combining juicy peaches, crisp greens, and a zesty dressing, perfect for a light lunch or as a side dish.


Ingredients

Scale
  • 2 ripe peaches, sliced
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/2 cup nuts (walnuts, pecans, or almonds), chopped (optional)

Instructions

  1. Slice the peaches into thin wedges and set aside.
  2. Combine the mixed greens in a large mixing bowl.
  3. Add the peach slices atop the greens.
  4. Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Dress the salad with the dressing, tossing gently to coat.
  6. Sprinkle with feta cheese and nuts if using.

Notes

Best enjoyed fresh, but can be stored in the fridge for up to 2 days. Serve immediately for optimal crunch.
