Description

A vibrant and refreshing salad celebrating summer’s bounty with fresh corn, creamy avocado, and juicy tomatoes.


Ingredients

  • 2 cups fresh corn kernels
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fresh corn, diced avocado, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, and chopped cilantro. Gently stir to mix the ingredients.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately or refrigerate for up to an hour before serving.
