Ingredients

  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare the Chicken and Corn: Grill the chicken and corn until charred and fully cooked. Cool, chop chicken, and remove corn from the cob if using fresh.
  2. Mix the Dressing: In a bowl, whisk together mayonnaise, Greek yogurt, lime juice, smoked paprika, salt, and black pepper until smooth.
  3. Combine Ingredients: In a large bowl, combine diced chicken, sweet corn, cucumber, red onion, and cilantro. Pour over dressing and mix gently.
  4. Chill: Cover and let it chill in the refrigerator for at least 30 minutes.
  5. Serve: Toss before serving and garnish with crumbled feta cheese and extra cilantro if desired.
