Ingredients

  • 4 oz cream cheese, softened
  • ½ cup granulated sugar
  • ¼ cup melted butter
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 ½ cups diced fresh strawberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line your muffin tin with paper liners or lightly grease it.
  3. Combine dry ingredients: In a large mixing bowl, whisk together flour, baking powder, and baking soda.
  4. Mix wet ingredients: In another bowl, beat cream cheese, sugar, and melted butter until creamy. Add eggs, milk, and vanilla, and stir until well combined.
  5. Add dry ingredients to wet mixture, stirring until just combined.
  6. Fold in diced strawberries gently.
  7. Spoon the batter into muffin tin, filling each cup about ¾ full.
  8. Bake for 18-22 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.
