Ingredients

- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 4 oz cream cheese, softened
- ½ cup granulated sugar
- ¼ cup melted butter
- 2 large eggs
- ½ cup milk
- 1 tsp vanilla extract
- 1 ½ cups diced fresh strawberries
Instructions
- Preheat the oven to 375°F (190°C).
- Line your muffin tin with paper liners or lightly grease it.
- Combine dry ingredients: In a large mixing bowl, whisk together flour, baking powder, and baking soda.
- Mix wet ingredients: In another bowl, beat cream cheese, sugar, and melted butter until creamy. Add eggs, milk, and vanilla, and stir until well combined.
- Add dry ingredients to wet mixture, stirring until just combined.
- Fold in diced strawberries gently.
- Spoon the batter into muffin tin, filling each cup about ¾ full.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack.
