- 1 lb (450g) Chicken breast or thighs, cubed
- 1 cup Orzo pasta
- 2 cups Chicken broth
- 1 head Broccoli, cut into florets
- 2 tbsp Olive oil
- 3 tbsp Honey
- 2 tbsp Soy sauce
- 3 cloves Garlic, minced
- 1/4 cup Feta cheese, crumbled
Instructions
- Preheat the oven: Set your oven to 200°C (400°F).
- Roast the broccoli: Toss broccoli florets with 1 tbsp of olive oil, salt, and pepper; spread on a baking sheet and roast for about 15 minutes.
- Cook the chicken: In a skillet, heat remaining olive oil over medium-high. Add the cubed chicken seasoned with salt and pepper, and cook for 5-6 minutes.
- Create the sticky glaze: Reduce heat, add minced garlic, honey, and soy sauce; stir for 2 minutes until thickened.
- Prepare the orzo: In a saucepan, boil chicken broth, add orzo, cover, and simmer for 8-10 minutes.
- Assemble and serve: In a bowl, layer orzo, sticky honey garlic chicken, topped with roasted broccoli and crumbled feta.
