A delightful dish featuring tender chicken glazed with sweet soy-honey sauce, served with roasted broccoli and orzo pasta.

- 1 lb (450g) Chicken breast or thighs, cubed
- 1 cup Orzo pasta
- 2 cups Chicken broth
- 1 head Broccoli, cut into florets
- 2 tbsp Olive oil
- 3 tbsp Honey
- 2 tbsp Soy sauce
- 3 cloves Garlic, minced
- 1/4 cup Feta cheese, crumbled
Instructions
- Preheat your oven to 200°C (400°F). Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes until they are beautifully charred at the edges and tender.
- Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Season the cubed chicken generously with salt and pepper. Cook for about 5–6 minutes until golden brown and cooked through, stirring occasionally to ensure even cooking.
- Add the minced garlic to the skillet. As it begins to fragrant, pour in the honey and soy sauce directly over the chicken. Stir constantly for about 2 minutes, allowing the sauce to bubble and coat the chicken, creating a sticky glaze.
- In a separate saucepan, bring the chicken broth to a rolling boil. Add the orzo, then reduce the heat to low, cover, and simmer for 8–10 minutes, or until all the liquid is absorbed and the orzo is tender.
- Spoon the orzo into bowls. Top it generously with the sticky chicken, all those glorious juices, and the roasted broccoli. Finish with a sprinkle of crumbled feta.
Notes
Make-ahead tips: Prepare the chicken and broccoli a day prior. Store separately in airtight containers. Reheat before serving.
