  • 1 avocado, diced
  • 1/2 cup queso fresco, crumbled
  • 1/4 cup cilantro, chopped

Instructions

  1. Prepare the shrimp by tossing them with honey, lime juice, olive oil, salt, and pepper in a medium bowl.
  2. Cook the shrimp on a preheated grill or skillet for 2-3 minutes on each side until pink and opaque.
  3. Create the salad base by combining corn, cherry tomatoes, diced avocado, and crumbled queso fresco in a large serving bowl.
  4. Top the salad with the cooked shrimp and gently toss to combine.
