Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Prepare the glaze by combining minced garlic, honey, olive oil, soy sauce, black pepper, and salt in a mixing bowl.
  3. Rub the mixture all over the beef shoulder, ensuring every crevice is coated.
  4. Roast the beef shoulder in a roasting pan, covering it with aluminum foil.
  5. Cook slowly for 3-4 hours until tender.
  6. Caramelize the top for 30 minutes by removing the foil.
  7. Rest the roast for 10-15 minutes before slicing.

Notes

For a sweeter glaze, substitute maple syrup for honey. Make-ahead option: prepare the glaze a day in advance and let the beef marinate overnight.
