- 2 pounds boneless, skinless chicken breasts
- 1 can (10 ounces) Rotel Original Diced Tomatoes and Green Chilies, undrained
- 1 medium onion, chopped
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- Fresh cilantro leaves, for garnish (optional)
Instructions
- Start by placing the chicken breasts in the slow cooker.
- Pour the undrained diced tomatoes and green chilies on top.
- Sprinkle the chopped onion, chili powder, cumin, garlic powder, onion powder, salt, and black pepper over the mixture.
- Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours.
- Once done, shred the chicken using two forks, mixing it well with the sauce left in the slow cooker.
- Serve your masterpiece garnished with fresh cilantro leaves, if desired.
