Description

This Slow Cooker Mexican Chicken is tender and flavorful, infused with spices and served over rice or in tacos, perfect for busy weeknight dinners.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (10 ounces) Rotel Original Diced Tomatoes and Green Chilies, undrained
  • 1 medium onion, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • Fresh cilantro leaves, for garnish (optional)

Instructions

  1. Start by placing the chicken breasts in the slow cooker.
  2. Pour the undrained diced tomatoes and green chilies on top.
  3. Sprinkle the chopped onion, chili powder, cumin, garlic powder, onion powder, salt, and black pepper over the mixture.
  4. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours.
  5. Once done, shred the chicken using two forks, mixing it well with the sauce left in the slow cooker.
  6. Serve your masterpiece garnished with fresh cilantro leaves, if desired.
