A quick and flavorful chicken stir fry with zucchini and bell peppers, perfect for busy weeknights.
Ingredients

- 2 chicken breasts, sliced
- 2 zucchinis, sliced
- 1 bell pepper, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Soy sauce to taste
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pan over medium heat until it shimmers.
- Add the minced garlic and sauté for about 30 seconds.
- Toss in the sliced chicken breast and cook for about 5-7 minutes.
- Introduce the zucchini and bell pepper to the pan and stir-fry for an additional 5-7 minutes.
- Drizzle with soy sauce and season with salt and pepper. Stir together and simmer for another 2 minutes.
- Serve hot, either plain or over rice or noodles.
Notes
Make-ahead by chopping vegetables the night before. Customize with other veggies or proteins as desired.
