Description

A quick and flavorful chicken stir fry with zucchini and bell peppers, perfect for busy weeknights.


Ingredients

Scale
  • 2 chicken breasts, sliced
  • 2 zucchinis, sliced
  • 1 bell pepper, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Soy sauce to taste
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat until it shimmers.
  2. Add the minced garlic and sauté for about 30 seconds.
  3. Toss in the sliced chicken breast and cook for about 5-7 minutes.
  4. Introduce the zucchini and bell pepper to the pan and stir-fry for an additional 5-7 minutes.
  5. Drizzle with soy sauce and season with salt and pepper. Stir together and simmer for another 2 minutes.
  6. Serve hot, either plain or over rice or noodles.

Notes

Make-ahead by chopping vegetables the night before. Customize with other veggies or proteins as desired.
