Description

Ingredients

  • 2 pieces chicken breasts, boneless, skinless
  • 1 tablespoon olive oil
  • To taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup mixed vegetables (bell peppers, onions, zucchini)
  • 1/2 cup Greek yogurt
  • 1 tablespoon ranch seasoning mix
  • To taste fresh herbs (parsley, dill)
  • 4 pieces pitas

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the chicken by patting it dry and seasoning with olive oil, salt, pepper, garlic powder, and paprika.
  3. Toss the mixed vegetables with olive oil, salt, and pepper in a bowl.
  4. Arrange the seasoned chicken in the center of a sheet pan, surrounded by the vegetables.
  5. Roast for about 20-25 minutes until chicken is cooked and golden brown.
  6. Prepare the herby ranch by whisking Greek yogurt and ranch seasoning mix together, stirring in fresh herbs.
  7. Assemble the pitas with chicken, roasted vegetables, and a drizzle of herby ranch.
  8. Serve and enjoy your delightful pitas!

Notes

Marinate chicken and chop vegetables ahead of time for deeper flavors. You can also use an air fryer or grill if desired.
