- 2 pieces chicken breasts, boneless, skinless
- 1 tablespoon olive oil
- To taste salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup mixed vegetables (bell peppers, onions, zucchini)
- 1/2 cup Greek yogurt
- 1 tablespoon ranch seasoning mix
- To taste fresh herbs (parsley, dill)
- 4 pieces pitas
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the chicken by patting it dry and seasoning with olive oil, salt, pepper, garlic powder, and paprika.
- Toss the mixed vegetables with olive oil, salt, and pepper in a bowl.
- Arrange the seasoned chicken in the center of a sheet pan, surrounded by the vegetables.
- Roast for about 20-25 minutes until chicken is cooked and golden brown.
- Prepare the herby ranch by whisking Greek yogurt and ranch seasoning mix together, stirring in fresh herbs.
- Assemble the pitas with chicken, roasted vegetables, and a drizzle of herby ranch.
- Serve and enjoy your delightful pitas!
Notes
Marinate chicken and chop vegetables ahead of time for deeper flavors. You can also use an air fryer or grill if desired.
