- 2 pieces chicken breasts, boneless, skinless
- 1 tablespoon olive oil
- To taste salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup mixed vegetables (bell peppers, onions, zucchini)
- 1/2 cup Greek yogurt
- 1 tablespoon ranch seasoning mix
- To taste fresh herbs (parsley, dill)
- 4 pieces pitas
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the chicken by patting it dry and coating it in a mixture of olive oil, salt, pepper, garlic powder, and paprika.
- Chop the mixed vegetables into bite-sized pieces and arrange them on one side of the sheet pan.
- Roast the chicken and vegetables in the oven for 20-25 minutes until golden and cooked through.
- Make the herby ranch dressing by whisking together Greek yogurt, ranch seasoning mix, and fresh herbs in a bowl.
- Assemble the pitas with sliced chicken, roasted vegetables, and a drizzle of herby ranch dressing.
