Description

A vibrant sheet pan meal featuring juicy pork chops and colorful roasted vegetables tossed in BBQ sauce.


Ingredients

  • 4 thick cut pork loin chops
  • 2 cups potatoes, diced
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1/2 cup BBQ sauce
  • 1/2 cup cheese (shredded, optional)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the veggies by tossing the diced potatoes, corn, chopped bell pepper, and zucchini with olive oil, salt, and pepper in a mixing bowl.
  3. Arrange the seasoned veggies across the sheet pan.
  4. Add the pork loin chops on top of the veggies.
  5. Brush the BBQ sauce generously over each chop.
  6. Roast for 25-30 minutes or until the pork is cooked through (145°F / 63°C) and veggies are tender.
  7. Add shredded cheese during the last 5 minutes if desired.
  8. Serve hot and enjoy!

Notes

For extra flavor, marinate the pork in BBQ sauce a few hours in advance. This dish is easily customizable with different veggies or sauces.
