Ingredients

- 4 thick cut pork loin chops
- 2 cups potatoes, diced
- 1 cup corn (fresh or frozen)
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1/2 cup BBQ sauce
- 1/2 cup cheese (shredded, optional)
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Prep the veggies by tossing the diced potatoes, corn, chopped bell pepper, and zucchini with olive oil, salt, and pepper in a mixing bowl.
- Arrange the seasoned veggies across the sheet pan.
- Add the pork loin chops on top of the veggies.
- Brush the BBQ sauce generously over each chop.
- Roast for 25-30 minutes or until the pork is cooked through (145°F / 63°C) and veggies are tender.
- Add shredded cheese during the last 5 minutes if desired.
- Serve hot and enjoy!
Notes
For extra flavor, marinate the pork in BBQ sauce a few hours in advance. This dish is easily customizable with different veggies or sauces.
