Ingredients
- Crisp Lettuce (romaine or iceberg)
- Salami (or turkey/chicken salami, or vegan alternative)
- Red Onion
- Cherry Tomatoes
- Cucumbers (English recommended)
- Bell Peppers (any color)
- Chickpeas
- Grated Parmesan Cheese (or nutritional yeast)
- Olive Oil
- Red Wine Vinegar (or balsamic vinegar)
- Salt & Pepper
Instructions
- Wash and dry all your vegetables thoroughly.
- Remove the base of the lettuce and chop it into bite-sized pieces. Place them in a large mixing bowl.
- Chop the salami into small chunks and add it to the bowl with the lettuce.
- Finely dice the red onion and scoop it into the bowl, followed by the halved cherry tomatoes, diced cucumbers, and chopped bell peppers.
- Add the chickpeas to the bowl.
- Whisk together ¼ cup of olive oil with 2 tablespoons of red wine vinegar, and a pinch of salt and pepper in a separate small bowl.
- Pour the dressing over the salad and toss everything together until combined.
- Sprinkle grated Parmesan cheese atop before serving.
Notes
Chop ingredients ahead of time for better flavor. Store dressing separately if storing leftovers to avoid wilted lettuce.
