Description

A vibrant blend of fresh vegetables, savory salami, and a zesty dressing that transforms any meal into a delightful experience.


Ingredients

  • Crisp Lettuce (romaine or iceberg)
  • Salami (or turkey/chicken salami, or vegan alternative)
  • Red Onion
  • Cherry Tomatoes
  • Cucumbers (English recommended)
  • Bell Peppers (any color)
  • Chickpeas
  • Grated Parmesan Cheese (or nutritional yeast)
  • Olive Oil
  • Red Wine Vinegar (or balsamic vinegar)
  • Salt & Pepper

Instructions

  1. Wash and dry all your vegetables thoroughly.
  2. Remove the base of the lettuce and chop it into bite-sized pieces. Place them in a large mixing bowl.
  3. Chop the salami into small chunks and add it to the bowl with the lettuce.
  4. Finely dice the red onion and scoop it into the bowl, followed by the halved cherry tomatoes, diced cucumbers, and chopped bell peppers.
  5. Add the chickpeas to the bowl.
  6. Whisk together ¼ cup of olive oil with 2 tablespoons of red wine vinegar, and a pinch of salt and pepper in a separate small bowl.
  7. Pour the dressing over the salad and toss everything together until combined.
  8. Sprinkle grated Parmesan cheese atop before serving.

Notes

Chop ingredients ahead of time for better flavor. Store dressing separately if storing leftovers to avoid wilted lettuce.
