- 2 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the chopped spinach, cream cheese, mozzarella, Parmesan, garlic, seasoning, salt, and pepper in a mixing bowl.
- Cut a pocket into each chicken breast.
- Stuff each chicken breast with the filling mixture.
- Heat olive oil in a skillet and sear chicken for 3-4 minutes on each side until golden-brown.
- Transfer chicken to a baking dish and bake in the oven for 20-25 minutes.
- Allow chicken to rest before slicing.
