- 1/2 cup unsweetened cocoa powder
- 3/4 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- Red food coloring (as desired)
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners.
- Combine the flour, sugar, baking powder, baking soda, salt, and cocoa powder in a large mixing bowl.
- Whisk together the vegetable oil, buttermilk, eggs, vanilla extract, and desired red food coloring in a separate bowl.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Beat together the softened cream cheese and powdered sugar until smooth.
- Divide the muffin batter and fill the prepared muffin cups halfway, then add a dollop of the cream cheese mixture and top with the remaining batter.
- Mix the crumb topping ingredients and sprinkle over each muffin.
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Allow to cool slightly before serving.
