Delicious pumpkin empanadas that are perfect for a comforting meal or snack.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup water
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 egg, beaten (for egg wash)
Instructions
- In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes.
- In another bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, and salt.
- Preheat the oven to 375°F (190°C).
- Roll out dough on a floured surface and cut into circles.
- Place a spoonful of the pumpkin mixture in the center of each circle.
- Fold the dough over to create a half-moon shape and seal the edges with a fork.
- Brush the tops with beaten egg.
- Bake for 25-30 minutes or until golden brown.
Notes
- For a sweeter filling, add more brown sugar to the pumpkin mixture.
- These empanadas can be frozen before baking for later use.
- Serve warm with a dusting of powdered sugar if desired.
