Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup water
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes.
  3. In another bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, and salt.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out dough on a floured surface and cut into circles.
  6. Place a spoonful of the pumpkin mixture in the center of each circle.
  7. Fold the dough over to create a half-moon shape and seal the edges with a fork.
  8. Brush the tops with beaten egg.
  9. Bake for 25-30 minutes or until golden brown.

Notes

  • For a sweeter filling, add more brown sugar to the pumpkin mixture.
  • These empanadas can be frozen before baking for later use.
  • Serve warm with a dusting of powdered sugar if desired.
