- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large sweet potatoes, peeled and chopped
- 1/4 cup butter
- 1/4 cup milk
- 1/4 cup bourbon
- 1/4 cup maple syrup
- 1 tbsp soy sauce
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground pork, breadcrumbs, grated Parmesan, egg, minced garlic, salt, and pepper in a large mixing bowl.
- Shape the mixture into meatballs about the size of a golf ball and arrange them on a parchment-lined baking sheet.
- Bake for 20-25 minutes or until golden brown and cooked through.
- Boil a pot of salted water and cook the sweet potatoes until tender, around 15-20 minutes.
- Drain and mash the sweet potatoes with butter and milk until creamy.
- Combine bourbon, maple syrup, and soy sauce in a small saucepan and bring to a simmer for about 5 minutes.
- Serve the meatballs over the sweet potato mash, drizzled with the bourbon-maple sauce.
