Description

A comforting dish featuring juicy pork meatballs served on a bed of creamy sweet potato mash, drizzled with a rich bourbon-maple sauce.


Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large sweet potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup milk
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 1 tbsp soy sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground pork, breadcrumbs, grated Parmesan, egg, minced garlic, salt, and pepper in a large mixing bowl.
  3. Shape the mixture into meatballs about the size of a golf ball and arrange them on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
  5. Boil a pot of salted water and cook the sweet potatoes until tender, around 15-20 minutes.
  6. Drain and mash the sweet potatoes with butter and milk until creamy.
  7. Combine bourbon, maple syrup, and soy sauce in a small saucepan and bring to a simmer for about 5 minutes.
  8. Serve the meatballs over the sweet potato mash, drizzled with the bourbon-maple sauce.
