- 2 cups fresh pineapple chunks
- 2 to 3 habanero peppers, stems removed (adjust to taste)
- 3 garlic cloves, minced
- 1/4 cup apple cider vinegar
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1/4 cup chopped red onion
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/4 cup water, as needed
Instructions
- Add the pineapple chunks, habanero peppers, garlic and red onion to a blender.
- Pour in the apple cider vinegar, honey, lime juice, salt, smoked paprika and black pepper.
- Blend until completely smooth, adding a little water if needed to reach your desired consistency.
- Pour the mixture into a saucepan and bring it to a gentle simmer over medium-low heat.
- Cook for 10 to 15 minutes, stirring occasionally, until the sauce thickens and the flavors combine.
- Taste carefully and adjust the honey or lime juice to balance the sweetness and tang.
- Let cool, then transfer to a clean container and refrigerate promptly.
