Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 garlic cloves, minced
  • 1/2 cup flour
  • 2 large eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with three bowls: one for seasoned flour, the second for beaten eggs, and the third for a mixture of Parmesan cheese and breadcrumbs.
  3. Begin dipping each chicken breast in the flour, ensuring an even coating, then shake off excess flour.
  4. Next, coat each breast in the Parmesan-breadcrumb mixture, pressing lightly to ensure it sticks.
  5. Heat olive oil in your skillet over medium heat until shimmering. Carefully add the breaded chicken breasts, frying until golden brown (about 3-4 minutes per side).
  6. Once fried, transfer the chicken to a baking dish.
  7. In the same skillet, reduce heat and add heavy cream and minced garlic, stirring to combine.
  8. Pour the sauce over the chicken breasts.
  9. Bake in the oven for 15-20 minutes or until the chicken is cooked through at an internal temperature of 165°F (74°C).

Notes

For a lighter version, substitute heavy cream with Greek yogurt or a splash of low-fat milk.
