- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 garlic cloves, minced
- 1/2 cup flour
- 2 large eggs
- 1/2 cup heavy cream
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- Set up a breading station with three bowls: one for seasoned flour, the second for beaten eggs, and the third for a mixture of Parmesan cheese and breadcrumbs.
- Begin dipping each chicken breast in the flour, ensuring an even coating, then shake off excess flour.
- Next, coat each breast in the Parmesan-breadcrumb mixture, pressing lightly to ensure it sticks.
- Heat olive oil in your skillet over medium heat until shimmering. Carefully add the breaded chicken breasts, frying until golden brown (about 3-4 minutes per side).
- Once fried, transfer the chicken to a baking dish.
- In the same skillet, reduce heat and add heavy cream and minced garlic, stirring to combine.
- Pour the sauce over the chicken breasts.
- Bake in the oven for 15-20 minutes or until the chicken is cooked through at an internal temperature of 165°F (74°C).

For a lighter version, substitute heavy cream with Greek yogurt or a splash of low-fat milk.
