- 250g lean beef mince
- 1 tsp olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional)
- 1 tbsp tomato purée
- 400g chopped tomatoes
- 500ml beef stock
- 150ml passata
- 120g fresh lasagne sheets, broken into pieces
- 100g ricotta cheese
- 60g mozzarella, grated
- 20g parmesan, grated
- Fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Heat the oil in a large deep frying pan or saucepan over medium heat.
- Sauté the onion for 3 to 4 minutes until softened and translucent.
- Add the minced garlic and cook for another 30 seconds.
- Cook the beef mince until browned, breaking it apart with your spoon, and season with Italian seasoning, smoked paprika, chili flakes, salt, and pepper.
- Incorporate the tomato purée and cook for an additional minute.
- Combine the chopped tomatoes, passata, and beef stock, stirring well, and bring to a gentle simmer.
- Add the broken lasagne sheets and simmer for 10 to 12 minutes until the pasta is tender.
- Taste and adjust the seasoning as needed.
- Serve the soup in bowls, topping each with ricotta, mozzarella, and parmesan, finishing with chopped parsley.
- Enjoy it immediately with loved ones.
Notes
Store leftovers in an airtight container for up to three days in the fridge, or freeze for up to three months.
