Description

A cozy and comforting one pan lasagne soup with rich beef, vibrant tomatoes, and creamy cheese.


Ingredients

  • 250g lean beef mince
  • 1 tsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato purée
  • 400g chopped tomatoes
  • 500ml beef stock
  • 150ml passata
  • 120g fresh lasagne sheets, broken into pieces
  • 100g ricotta cheese
  • 60g mozzarella, grated
  • 20g parmesan, grated
  • Fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat the oil in a large deep frying pan or saucepan over medium heat.
  2. Sauté the onion for 3 to 4 minutes until softened and translucent.
  3. Add the minced garlic and cook for another 30 seconds.
  4. Cook the beef mince until browned, breaking it apart with your spoon, and season with Italian seasoning, smoked paprika, chili flakes, salt, and pepper.
  5. Incorporate the tomato purée and cook for an additional minute.
  6. Combine the chopped tomatoes, passata, and beef stock, stirring well, and bring to a gentle simmer.
  7. Add the broken lasagne sheets and simmer for 10 to 12 minutes until the pasta is tender.
  8. Taste and adjust the seasoning as needed.
  9. Serve the soup in bowls, topping each with ricotta, mozzarella, and parmesan, finishing with chopped parsley.
  10. Enjoy it immediately with loved ones.

Notes

Store leftovers in an airtight container for up to three days in the fridge, or freeze for up to three months.
