  • 1 teaspoon vanilla extract
  • 1 tablespoon butter (for topping)
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cherry filling in a mixing bowl, combining the pitted cherries, sugar, flour, lemon juice, and vanilla extract.
  3. Roll out your pie crust on a floured surface to fit your pie dish comfortably.
  4. Pour the cherry mixture into the crust evenly.
  5. Dot the mixture with small pieces of butter.
  6. Roll out a second pie crust and place it over the filling, or create a lattice pattern.
  7. Brush the top with beaten egg for a golden finish.
  8. Bake for 30-35 minutes until the crust is golden and the filling is bubbling.
  9. Cool the pie for at least 30 minutes before slicing.
