Description

Deliciously chewy oatmeal raisin bars, filled with the comforting flavors of cinnamon and brown sugar, perfect for snacks or dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix the dry ingredients in a large bowl.
  3. Cream the butter and sugars in another bowl until light and fluffy, then add the egg and vanilla.
  4. Combine the wet and dry ingredients, folding gently.
  5. Fold in the raisins until evenly distributed.
  6. Spread the mixture into the baking pan and smooth the top.
  7. Bake for 25-30 minutes, until golden brown.
  8. Cool in the pan for 10 minutes before transferring to a cooling rack.
  9. Cut into squares and serve.

Notes

For a vegan version, use a flaxseed mixture and coconut oil instead of butter and egg.
