- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup raisins
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Mix the dry ingredients in a large bowl.
- Cream the butter and sugars in another bowl until light and fluffy, then add the egg and vanilla.
- Combine the wet and dry ingredients, folding gently.
- Fold in the raisins until evenly distributed.
- Spread the mixture into the baking pan and smooth the top.
- Bake for 25-30 minutes, until golden brown.
- Cool in the pan for 10 minutes before transferring to a cooling rack.
- Cut into squares and serve.
Notes
For a vegan version, use a flaxseed mixture and coconut oil instead of butter and egg.
