- 1 cup Pumpkin Puree
- 1 ½ cups All-Purpose Flour
- ½ cup Brown Sugar
- ½ cup White Sugar
- 2 large Eggs
- 2 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Salt
- 1 tsp Ground Cinnamon
- ½ tsp Ground Nutmeg
- 1 tsp Vanilla Extract
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin with liners or grease lightly.
- Combine dry ingredients in a mixing bowl.
- Mix wet ingredients in another bowl until smooth and glossy.
- Combine wet and dry mixtures, folding gently.
- Scoop the batter into muffin cups about two-thirds full.
- Sprinkle sugar or nuts on top for crunch.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
