Ingredients

  • 1 bag of tater tots
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef or turkey in a large skillet over medium heat, about 5-7 minutes.
  3. Stir in the taco seasoning, black beans, corn, and salsa. Cook for 2-3 minutes until heated through.
  4. Grease a 9×13 inch baking dish.
  5. Spread the meat mixture evenly on the bottom of the dish.
  6. Top with a layer of tater tots.
  7. Sprinkle shredded cheese on top.
  8. Bake for 25-30 minutes until the tater tots are golden brown and the cheese is bubbling.
  9. Let cool slightly, then serve topped with sour cream and green onions.
