- 2 Zucchini
- 1 cup Bell Peppers (Red & Yellow)
- 1 Red Onion
- 1 cup Cherry Tomatoes
- 3 cloves Garlic
- 1/2 cup Kalamata Olives
- 2 tablespoons Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1 teaspoon Paprika
- Salt and Black Pepper
- 1/2 cup Feta Cheese
- 1/4 cup Fresh Parsley
- 1 whole Lemon Wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Prep the chicken by cutting it into bite-sized pieces and seasoning with salt, pepper, oregano, basil, and paprika.
- Chop the zucchini, bell peppers, and red onion into uniform pieces; halve the cherry tomatoes and mince the garlic.
- Combine the chicken and veggies in a large mixing bowl, tossing them with olive oil until well coated.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
- Add feta cheese in the last five minutes of baking, and garnish with parsley and lemon wedges before serving.
- Serve warm and enjoy the vibrant flavors.
