Ingredients

  • 2 Zucchini
  • 1 cup Bell Peppers (Red & Yellow)
  • 1 Red Onion
  • 1 cup Cherry Tomatoes
  • 3 cloves Garlic
  • 1/2 cup Kalamata Olives
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Paprika
  • Salt and Black Pepper
  • 1/2 cup Feta Cheese
  • 1/4 cup Fresh Parsley
  • 1 whole Lemon Wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the chicken by cutting it into bite-sized pieces and seasoning with salt, pepper, oregano, basil, and paprika.
  3. Chop the zucchini, bell peppers, and red onion into uniform pieces; halve the cherry tomatoes and mince the garlic.
  4. Combine the chicken and veggies in a large mixing bowl, tossing them with olive oil until well coated.
  5. Transfer the mixture into a greased baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  7. Add feta cheese in the last five minutes of baking, and garnish with parsley and lemon wedges before serving.
  8. Serve warm and enjoy the vibrant flavors.
