- 1 packet taco seasoning (low carb)
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup cauliflower rice or shredded zucchini
- 1/2 cup chopped bell peppers
- Sour cream and avocado for topping (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef, diced onion, and minced garlic in a large skillet over medium heat until the beef is browned and cooked through; drain excess fat.
- Sprinkle in the taco seasoning and stir in the diced tomatoes and chopped bell peppers; cook for an additional 2-3 minutes.
- Layer the cauliflower rice or shredded zucchini in a greased baking dish.
- Spoon the beef mixture evenly over the layer of cauliflower or zucchini.
- Sprinkle shredded cheese on top.
- Bake for 20-25 minutes, until the cheese is bubbly and golden.
- Let cool briefly before serving. Top with sour cream, avocado, and cilantro.
