  • 1 cup diced tomatoes (canned or fresh)

  • 1 cup cauliflower rice or shredded zucchini
  • 1/2 cup chopped bell peppers
  • Sour cream and avocado for topping (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef, diced onion, and minced garlic in a large skillet over medium heat until the beef is browned and cooked through; drain excess fat.
  3. Sprinkle in the taco seasoning and stir in the diced tomatoes and chopped bell peppers; cook for an additional 2-3 minutes.
  4. Layer the cauliflower rice or shredded zucchini in a greased baking dish.
  5. Spoon the beef mixture evenly over the layer of cauliflower or zucchini.
