- 2 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
- Zest and juice of 1 lemon
- 1/2 teaspoon dried thyme
- 2 medium zucchini, sliced into half-moons
- Fresh parsley, chopped, for garnish
Instructions
- Season the chicken: Generously sprinkle salt and black pepper on both sides of the chicken breasts.
- Dredge in flour: Coat each chicken breast in flour, shaking off any excess.
- Sear the chicken: Heat olive oil in a skillet over medium heat, then add the chicken. Cook for 4-5 minutes on each side.
- Sauté garlic: In the same skillet, add minced garlic and sauté for about 1 minute.
- Make the sauce: Pour in chicken broth, heavy cream, Parmesan cheese, lemon zest, and lemon juice. Stir and let it simmer.
- Add thyme and zucchini: Once sauce has thickened, add thyme and zucchini, returning chicken to the skillet.
- Garnish and serve: Remove from heat, sprinkle with parsley, and serve warm.
Notes
For best results, ensure chicken is of even thickness and all ingredients are prepped before cooking. Store leftovers in an airtight container for up to 3 days.
