  • 1 cup ketchup
  • 1/2 cup Worcestershire sauce
  • 1/2 cup apple cider vinegar
  • 1/3 cup molasses
  • 1/4 cup packed brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon Dijon mustard
  • 1 tablespoon unsalted butter
  • 1 tablespoon hot sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1/4 teaspoon salt
  • 1/4 cup water, plus more if needed

Instructions

  1. Add all the ingredients except the butter to a medium saucepan.
  2. Place over medium heat and whisk until the brown sugar dissolves and everything is combined.
  3. Bring to a gentle simmer, then reduce the heat to low. Cook uncovered for 20 to 25 minutes, stirring occasionally, until thick, glossy and deeply flavored.
  4. Stir in the butter during the final 2 to 3 minutes of cooking.
  5. Taste and adjust, adding vinegar for tang, brown sugar for sweetness or cayenne and hot sauce for heat. Whisk in a tablespoon or two of water if too thick.
  6. Cool for 10 to 15 minutes. The sauce will thicken slightly as it cools.
  7. Brush over meat during the final minutes of cooking or serve on the side.
