- 4 chicken thighs (or breasts), boneless and skinless
- 2 tablespoons jerk seasoning
- 1 ripe mango, diced
- 2 cups cabbage, shredded
- 1 cup carrots, shredded
- 1/4 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tablespoon honey
- 1/4 cup sour cream or Greek yogurt
- Salt and pepper to taste

Instructions
- Preheat your grill or stovetop grill pan over medium heat. Season the chicken thighs with jerk seasoning and drizzle with olive oil. Grill until cooked through, about 6-7 minutes per side, until you achieve a nice char and internal temperature of 165°F.
- Prepare the slaw: In a large bowl, mix together the shredded cabbage, carrots, diced mango, and the thinly sliced red onion. Drizzle with lime juice and a pinch of salt. Toss to combine.
- Make the honey lime cream: In a small bowl, whisk together the honey and sour cream or Greek yogurt until smooth. Taste to adjust sweetness if necessary.
- Plate your masterpiece: Thinly slice the grilled chicken and arrange it on a bed of mango slaw in your serving bowl. Drizzle the honey lime cream over the top and sprinkle with fresh cilantro. Serve immediately.
