Ingredients

  • 4 chicken thighs (or breasts), boneless and skinless
  • 2 tablespoons jerk seasoning
  • 1 ripe mango, diced
  • 2 cups cabbage, shredded
  • 1 cup carrots, shredded
  • 1/4 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon honey
  • 1/4 cup sour cream or Greek yogurt
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your grill or stovetop grill pan over medium heat. Season the chicken thighs with jerk seasoning and drizzle with olive oil. Grill until cooked through, about 6-7 minutes per side, until you achieve a nice char and internal temperature of 165°F.
  2. Prepare the slaw: In a large bowl, mix together the shredded cabbage, carrots, diced mango, and the thinly sliced red onion. Drizzle with lime juice and a pinch of salt. Toss to combine.
  3. Make the honey lime cream: In a small bowl, whisk together the honey and sour cream or Greek yogurt until smooth. Taste to adjust sweetness if necessary.
  4. Plate your masterpiece: Thinly slice the grilled chicken and arrange it on a bed of mango slaw in your serving bowl. Drizzle the honey lime cream over the top and sprinkle with fresh cilantro. Serve immediately.
