- 1 1/2 cups (340 g) cottage cheese
- 2 cups (180 g) rolled oats
- 3 large eggs
- 1 cup (100 g) shredded cheddar cheese, plus extra for topping
- 2 fresh jalapeños, finely chopped, plus a few slices for topping
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper.
- Blend the cottage cheese, eggs and rolled oats until mostly smooth.
- Add the baking powder, garlic powder, salt and black pepper. Mix well.
- Fold in the shredded cheddar and chopped jalapeños.
- Pour the batter into the prepared loaf pan and smooth the top.
- Sprinkle extra cheddar and a few jalapeño slices on top.
- Bake for 40 to 45 minutes, until the loaf is set and golden and a toothpick inserted in the center comes out mostly clean.
- Cool for 15 to 20 minutes before removing from the pan. Cool further before slicing.
