Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 potatoes, diced
  • 1 cup parsnips, chopped
  • 1 cup green beans, trimmed and cut
  • 1 cup peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion, chopped carrots, and celery, allowing them to sauté for about 5 minutes.
  2. Add the garlic: Stir in the minced garlic and let it cook for another minute.
  3. Combine the broth and veggies: Pour in the vegetable broth, then toss in the diced potatoes, parsnips, green beans, peas, thyme, and rosemary.
  4. Bring to a boil: Raise the heat and bring the mixture to a gentle boil. Once bubbling, reduce the heat back down to a simmer and cook for 25-30 minutes.
  5. Season to perfection: Taste the stew and season with salt and pepper.
  6. Garnish and serve: Ladle the stew into warm bowls and finish with a sprinkle of fresh parsley.

Notes

This stew can be made ahead and stored in the fridge for up to three days. It can also be frozen for up to three months. Adjust cooking times if using an Instant Pot or slow cooker.
