Ingredients

  • 2 large sweet potatoes
  • 1 lb ground beef
  • 1/4 cup hot honey
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef over medium heat until browned.
  4. Add the diced bell peppers, onions, garlic powder, onion powder, salt, and pepper to the beef, cooking until the vegetables are soft.
  5. Stir in the hot honey and mix well.
  6. Once the sweet potatoes are done, cut them in half lengthwise and scoop out a bit of the flesh to create a boat.
  7. Fill each sweet potato half with the hot honey beef mixture.
  8. Garnish with chopped green onions and serve warm.
