- 4 chicken breasts, boneless and skinless
- 1/4 cup honey
- 1/4 cup lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- 1/4 cup cilantro, chopped
Instructions
- Whisk together the honey, lime juice, salt, and black pepper in a medium-sized bowl.
- Place the chicken breasts in a large zip-top bag and pour the honey-lime mixture over them. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- Preheat your grill or grill pan to medium-high heat.
- Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Rest the chicken for a few minutes before slicing.
- Combine diced mango, red onion, jalapeño, and cilantro in another bowl, mixing gently.
- Serve the grilled chicken topped with generous spoonfuls of Mango Salsa.
