Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 ripe mango, diced
  • 1/2 red onion, diced
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped

Instructions

  1. Whisk together the honey, lime juice, salt, and black pepper in a medium-sized bowl.
  2. Place the chicken breasts in a large zip-top bag and pour the honey-lime mixture over them. Seal the bag and marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. Rest the chicken for a few minutes before slicing.
  6. Combine diced mango, red onion, jalapeño, and cilantro in another bowl, mixing gently.
