- 2 tablespoons honey
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cooked white or brown rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/4 cup red onion, sliced
- 3 tablespoons fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 1/2 teaspoon chili flakes (optional)
Instructions
- Whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and black pepper until well combined.
- Place the chicken breasts into the marinade, ensuring they are evenly coated. Allow it to marinate for 10–15 minutes.
- Heat your skillet over medium heat. Cook the chicken for 5–7 minutes per side until golden brown and cooked through (internal temp 165°F or 75°C).
- Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into strips.
- Prepare your bowls by placing a generous scoop of warm rice as the base.
- Arrange the sliced chicken over the rice, followed by avocado, cherry tomatoes, corn, and red onion.
- Finish with cilantro, and drizzle with yogurt or sour cream if desired.
- Serve immediately while warm.
Notes
For extra flavor, marinate the chicken overnight and cook rice ahead of time.
